Waffle Brownies

La Food Works Recipie for Carrot Fennel SoupThis is a really fun recipe to make for dessert.  The batter looks kind of thick and funky when you finished blending all the ingredients.  It may feel like it just will not work, but put some scoops on your waffle iron, lower the top and let it cook.  Make sure to let them cool to crisp up a bit, then enjoy!  They are sooooo delicious!!!!  Great with ice cream, whipped cream, hot fudge, sliced strawberries or bananas or just by themselves!”   These brownie waffles are off the charts chocolaty.

Serving Size: 8

1/2 cup  butter
1/4 cup  unsweetened cocoa powder
3/4 cup  sugar
1 tablespoon  water
2 eggs — beaten
1 1/4 cups  flour
1/4 teaspoon  salt
1/2 cup  mini chocolate chips
whipped cream
sliced strawberries
hot fudge topping

Preheat waffle iron to a low setting.

Melt butter in a sauce pan.  Remove from heat and stir in the cocoa.   Keeping the mixture in the sauce pan, mix in sugar and water.  Add the eggs slowly but stir quickly so the eggs don’t scramble.

Mix the flour and salt together in a separate bowl.  Add the flour mixture to the chocolate and mix until well combined and no lumps.  Stir in the chocolate chips.

Spray the waffle iron with non-stick vegetable oil. In each well of the waffle iron, add 1/3 to 1/2 cup of brownie mixture.  Cook in the waffle iron as you would cook waffles for about 4 minutes.  Remove from iron and let cool on a wire rack to crisp up.

Serve with whipped cream, slice strawberries and a little hot fudge.
